Olives are an exelence source of fiberand they contain such as minerals as zinc, iron, calcium, magnesium,and phosphorus. Olives are very high in anti-oxidant vitamins A, and E. Anti-oxidants are good for the body because they neutralize the damaging effects of free radical found in your body as aresult of pollution and metabolism of unhealthy fats and other compounds. Resent reaserch shows that free radicals damage is the culprit of many diseases, including, cancer infla matory illnesses, and accelerated aging. That's why nutritionists recomended eating olives to enjoy the rich taste and its valuable health benefits. Olives are moderately high in fats as well, but the fats they contain are good mono-unsaturate d fats. Unlike saturated fats, which are bad for your heart, mono-unsaturate d fats have been found to reduce the risk of atherosclerosis and heart diseases by decreasing LDL (bad) cholesterol and increasing HDL (good) cholesterol. As for the aroumatic oliv oil that is squeezed from olives, it is being touted for its ability to reduce blood presure, lower blood cholesterol levels, help diabetics to control blood sugar levels, and decrease the severity of asthma and arthritis. Scientists have identified a compound in olive oil called'oleuropean'which prevent the LDL cholesterol from oxidizing. It's the oxidized cholesterol that stick to the walls of arteries and from the plaque that narrows and hardens the arteries; increasing the chance of heart attack. Replacing other fats in your diet with olive oil can significantly lower blood presure and reduce the risk of heart attack. Mother are encouraged to massage warm olive oil onto a distressed baby's tummy to ease colicky pain and calm the baby. It can be used on tired muscle in generalto soothe aches and pains. The oleic acid foundin olive oil is especially powerful in preventing breast, colon, and prostate cancer. Olive oil also can lower the incidence of gallstone formation, soothe gastric ulcers and can be used as a natural treatment for constipation. TO MAKE OLIVE SALAD,,,, Ingredients; 1 Medium sized potato Handful of fresh thyme springs 1 cup green olives,pitted 1 table spoon olive oil 1 tea spoon lemon juice Pinch of salt and red cayenne pepper powder Couple strands of brainded cheese Method; 1 Wash, boil,peel and choop the photatoes into small cubes. 2 Mix all the ingredients together except the chees in a bowl. 3 Adjust the seasonings to taste. 4 Empty into a serving platter and garnish with the brainded cheese.-yum-

I hate eating olives so I avoid them. Thanks for the info though. I do however acknowledge the benefits of it as well as olive oil, olive butter and olive skin care range and make use of those. Just don't ask me to eat olives because I won't. /smiley
